Mixing is a critical step in achieving the ideal texture and consistency of alternative protein products. Some plant-based proteins will require high-shear cutting/mixing, some low-shear cutting/mixing. All will be viscous and sticky. The Seydelmann VersaKut allows you to maximize yield and reduce waste, all while creating a better product.
The Vemag Burger Former, also known as the Vemag FM250, allows you to produce artisanal quality plant-based burgers that are consistent in weight and texture at a high volume. It offers gentle, low-pressure forming yet high-speed production to create exact-weight burgers with a handmade look. The Vemag FM250 uses inline grinding, producing excellent texture, clear structure, and uniform particle distribution. The Vemag Process Check, together with tendency control, monitors individual portions, and adjusts the Vemag to ensure uniform weights and reduced giveaway. Vemag Burger Formers allow for quick changeover from one burger shape or size to another, reducing downtime in production.
The Vemag CC215 co-extrusion system, part of the Vemag Alginate Sausage Line, produces exact-weight alternative protein sausages in edible, vegetable-based alginate casings. The alginate casing encapsulates the alternative protein sausage in a transparent skin, allowing the product to remain visible. This system does not require an operator, and its rapid, continuous operation significantly reduces labor and production costs.
The Vemag Ball Former, an attachment to the Vemag Stuffer, produces exact-weight portions of alternative protein ball-shaped products at a high speed. It allows for perfect control of shapes with the option of 2-, 6-, and 12-outlet configurations. With the Vemag Ball Former, it’s possible to perform fast, easy changeovers between any size or weight product. You can also modify the Vemag Ball Former to allow for co-extrusion. Lastly, it is possible to flatten the balls into pucks using an attachable flattening device.
The Vemag MMP223, an attachment to a Vemag Stuffer, is a high-speed alternative protein noodle loaf and ground brick portioning system. It produces exact-weight portions while providing excellent quality. It provides a clear “noodle” structure and uniform particle distribution. Vemag MMP223 portioner sets the industry standard in speed, weight accuracy, and reduced give-away. And it allows for fast, easy changeovers between any shape or size.
