Reiser and Vemag have developed a high-speed muscle stuffing system that is ideal for producing all types of large muscle products. The system processes smaller sections of meat to take on the appearance of large, single muscles. A Vemag double-screw Stuffer is fitted with a Vemag Vacuum Hopper to provide total vacuum throughout the process. The closed system eliminates air pockets in the finished product and ensures better product color and color retention. The result is a high-quality finished product with a high density to allow better slicing. This proven system is ideal for all types of ham and deli products, including pork, beef, chicken and turkey.
